Salted with salt from Salies de Béarn, it is strictly selected before starting a long ripening within our stone–built tunnel, so as to reach top quality.
The alchemy between nature, the cheese cellar and the know–how of specialists in the ripening process, while respecting a method perfected in Béarn, will give birth to an outstanding cheese.
On top of being a genuine concentrate of aromas and flavours, it combines strength and smoothness with a lasting taste.
